Ok, so I used to HATE Coleslaw. I don’t know what it is about it, but I really hated it. Maybe it was the fact that it was made from cabbage, or the fact that there was mayonnaise in it, I really don’t know. I am still not this biggest fan, but I LOVE this Cajon Style Slaw.
First of all I LOVE Cajun flavors. I love my spice, I honestly cannot get enough. Eventually I would like to make my own cajun spice, but for the sake of simplicity I used pre-jarred seasoning. I know that is cheating, but sometimes you need to take a shortcut!
If you have a good cajun seasoning that you make feel free to use that instead in the recipe. This recipe is very simple, and does not require much work. If you are in a time crunch I promise this will be a good choice for you!
In a large bowl mix together 1/2 cup Soy-Free Vegenaise, 2 Tbsp Creole Mustard (if you cannot find this whole grain Dijon Mustard will work), 1 Tbsp Apple Cider Vinegar, 1/4 tsp Liquid Smoke (this can be omitted), 1 Tbsp Cajun Seasoning, and a dash of Cayenne Pepper. Once this is blended together add in the coleslaw. I used tri-color but you can use any you want. I used pre packaged, but if you have been receiving cabbage from a CSA, I would use that instead. I prefer the taste of fresh to pre-packaged. Mix the coleslaw and the sauce, until everything is coated. Cover and refrigerate for at least an hour. The longer the coleslaw sits, the better it will taste!
- 1 Baq Tricolor Slaw
- ½ Cup Vegan Mayo
- 2 Tbsp Creole Mustard
- 1 Tbsp Apple Cider Vinegar
- ¼ Tsp Liquid Smoke
- 1 Tbsp Cajun Seasoning
- Dash Cayenne Pepper
- Whisk together Mayo, mustard, ACV, Liquid Smoke, Cajun Seasoning, and Cayenne Pepper.
- Add in Slaw, and mix to combine.
- Refrigerate for at least an hour before serving.
