So I need to make a confession. In between being a vegetarian and a vegan I ate meat. Partly because I was given a list of foods to eliminate from my diet because of migraines, and I was left with very little to eat. So I ate meat. During that time I LOVED BBQ. I mean I was living in North Carolina it was bound to happen. In an attempt to recreate BBQ I decided to jump on the Jackfruit wagon.
So I bet you are wondering what Jackfruit is, am I right? Obviously it is a fruit, and fun fact is related to the mulberry. The fruit comes from the South/Southeast region of Asia. You can buy it in a can and it will either be in brine, water, or syrup. You want it to either be in water or brine. When using jackfruit as a meat replacer, you want to use young green jackfruit. I am sure you can use fresh young green jackfruit, but I won’t be much help in the preparation.
I like to use my slow cooker, and I thought this would be a great chance to bring it out again. I love not having to worry about something and just letting it do its thing. Plus it makes the house smell spectacular! Before using the slow cooker you are going to back the jackfruit shreds, so preheat your oven to 400.
Once rinsed you are going to cut out the core of the jackfruit (that is the triangle part). You will also want to remove the seeds as you go along. this is very easy when you are shredding!
Once you remove the core you will begin shredding the jackfruit. I used my hands as it made it easier to remove the seeds. Place the jackfruit in a bowl, and season with 1 Tbsp of Cajun Spices (I used prepared, but you can very easily make your own).
Your oven should be preheated by now, so you can placed the jackfruit shreds on a parchment lined baking sheet. Bake for 15 minutes and remove.
You will want to make your BBQ sauce (although you can use bottled), check out my Bourbon Kansas City Style BBQ Sauce. Throw the jackfruit, and BBQ Sauce in the crockpot and cook on high for 4 hours, or on low for 8 hours. I cooked it on high, but if I had started in the morning I would have just cooked it on low!
- 2-14-16 oz. cans Jackfruit, young green in water or brine (not Syrup)
- 1 Tbsp Cajun Seasoning
- 1 Recipe of Bourbon KC Style BBQ Sauce
- Preheat oven to 400
- Drain and rinse the jackfruit.
- Cut off the core of jackfruit, and shred, removing seeds as you go.
- Bake for 15 minutes
- Make BBQ Sauce (or use store bought).
- Add BBQ Sauce and Jackfruit to the crockpot. Cook on low for 8 hours, or on high for 4 hours.
