I LOVE a good stuffed Sweet Potato. They’re easy to make make, and great for busy weeknights. And they are good for you. And they are filling. If you are at a loss, or you live alone and don’t want to make a full family style meal, this dish is perfect! And it is great for days when you want to meal prep some lunches for the week, simply cook the amount you need to get you through.
Sweet Potato From Beginning to End:
Preheat oven to 400. Pierce Sweet Potato several times with a fork. Place on baking sheet lined with foil, Drizzle with Italian Herb Olive Oil and bake for 45 minutes to 1 hour.
While the Sweet Potato is in the oven Cut one link of Vegan Italian Sausage into bite sized pieces. Heat 1 Tbsp Extra Virgin Olive Oil over medium heat, and saute the Sausage until crispy. Cut Baked Sweet Potato in half, top with Vegan Butter, Vegan Sour Cream, cooked Sausage, Parsley, and Salt and Pepper.
- 1 Sweet Potato
- 1 Link Vegan Italian Sausage, sliced
- 2 Tbsp Italian Herb Olive Oil, divided
- Pierce Sweet Potato with Fork, drizzle with 1 Tbsp Olive Oil, and bake at 400 for 45mins to an hour.
- Saute Sliced Vegan Sausage in 1 Tbsp Olive Oil.
- Cut Sweet Potato in half, and top with Vegan Butter, Vegan Sour Cream, Vegan Sausage, and Parsley.
Dinner doesn’t always have to be a crazy meal. Sometimes it is best to make it simple.
