Happy Cinco de Mayo everyone! This is going to be another one of those posts that will help you plan your fantastic dinner for tonight! Plus I need to give you all an update on why you have not seen any new recipes. I moved everyone, I am now living in Nashville, Tennessee, and I am loving it, but the majority of my cooking supplies are still in Maryland with my husband, while I work on finding us a place to live!
Well for this one there is really only one soup. If you are currently suffering from rainy weather, and a slight chill, then I recommend making this soup. At the very least it makes a good 1st course (if you are having multiple).
This Chipotle Pumpkin Soup is simply to die for, add a little Avocado Crema, and some Chipotle Sausage and you are good to go! Plus it will warm the heart and soul on a chilly day in May.
Well what is a Cinco de Mayo bash without some tasty dip! At this point in time I am regretting that I never posted my recipe for Layered Dip, but I promise you will get that soon! In the mean time, I am sure most of you know how to make a good spread! Don’t forget the chips!
Can’t have a party with would Guacamole! And homemade is always the best! Just make sure you also have some salsa, because chips and dip is the way to go. If you are looking for a good Queso dip, I recommend this Vegan Queso Recipe.
Again I am really wishing my Sofritas Recipe was ready, but alas it is not. I promise it will be ready soon. But what is a party without some Tacos? Hard or soft, or even as a salad, it does not matter.
I have this labeled as Tofu Fajitas, but they can be tacos too! They are so damn tasty, and super easy to make! My husband could even make these!
Lentil Taco Meat, is filled with protein, and is easy to make! This recipe is also soy free if you are trying to avoid soy! And there is no processed fake meat, which is nice to avoid some times. These Lentil Tacos will be sure to wow! The secret is in the spices!
Sometimes, tacos aren’t the way you want to go, and you want to make something a little more complex, or less cliche (for lack of a better term).
Enter King Ranch Chicken, pretty much my all time favorite thing to eat and make. Plus this casserole is so filling, and it is sure to last you the week. And who am I kidding, these leftovers are the best.
And then, there are Vegan Enchiladas – I mean who doesn’t love a good Enchilada? This was one of my first recipes, and I am thinking I need to revisit the Enchilada, and make some newer and updated versions.
Bowls and Salads:
Sometimes you are craving a bowl, or a salad, well if that is what you are feeling today, the following recipes are for you!
This Mexican Salad is pretty much the kitchen sink of salads, with the added bonus of a simply to die for dressing!
This is one of my favorite bowl recipes ever, and it would be perfect for Mexican Night. Make this Sriracha Lime Tofu Bowl, and enjoy it for the rest of the week for lunch!
Finally we have the dish my husband calls the “Fiesta Bowl” and it really is the perfect party bowl! And to make it even better, it is super easy!
Whether you are making Tacos or a Bowl, this Cilantro Lime Rice is a must! Use as a base for the bowls, or as a side for Tacos! Don’t forget to make some Black Beans as well!
Get your Drink On:
Make this tasty Bloody Mary – and to make it more appropriate for the celebration, swap out the Vodka for Tequilla, to make it a Bloody Maria!
