So you want to get to know me? Well my name is Casey and I am the creator of Fakin’ Good. The name “Fakin’ Good” came from a funny brunch with my step-son. I have spent some time trying to convince him to go entirely vegan (sadly it has been a losing battle). He is a vegan at home, but when he goes out into the world he makes his own food choices (which aren’t necessarily vegan). One morning I decided to make a vegan brunch. It consisted of a Tofu Scramble, Breakfast Potatoes, and “Fake Bacon” (not homemade). I asked him, what he thought of the fake bacon; his response, “it’s fakin’ good.” You should know my fiancé and son are just full of puns!
I spent the majority of my life as a vegetarian, and finally decided to go vegan. Part of this was health related, but I have to say I absolutely LOVE the animals, so the change was inevitable. I suffered from severe, debilitating migraines, a side-effect of chronic Lyme. I decided to drop all animal products, and now I suffer from maybe one migraine a month. Which coming from someone who had a migraine daily, this is a huge deal.
I have been cooking and baking ever since I can remember, and I absolutely love it! I actually wanted to go to culinary school instead of college, but college won out. That being said, my love and joy of cooking has continued. My goal with this blog is to veganize some of my favorite recipes from childhood, as well as some traditionally Southern meals (I went to college in North Carolina so I have a soft spot). Please bear with me as I get my legs under me. I hope you enjoy the recipes, as I am looking forward to sharing them with you.
